My Saving Grace

Going on a diet is hard. Going on a diet where you have to boil water, slice a lemon, juice it, cook eggs, make the rest of your breakfast, and then brew yourself a mug of green tea is harder. Doing all that while two little boys circle your legs like ravenous cats is darn near impossible.

I had to think of something I could make ahead, re-heat quickly, that was also something the boys would be happy to eat. I had success over the summer making the boys waffles, but they grew tired of them pretty quickly and ended up feeding them to the dog.

Enter the two pound chocolate bar my aunt sent the boys, and the way it kept calling to me from the deep recess above the refrigerator where I stashed it. "Eat me!" It called alluringly into the kitchen. "I'm delicious!" It broadcast into the living room. "One bite won't hurt anything!" It cajoled to me upstairs. So I grabbed it off the shelf, broke it into fifty pieces, and then pummled it into tiny, innocous smithereens with a fork. I felt so much better. But then I had a bowl of took-my-frustrations-out-on-it chocolate. It wasn't pretty.

To destroy the evidence, I dumped waffle mix on top of it, stirred it up according to the package directions, decided it looked waaaay too much like chocolate chip cookie batter to be safely left alone with me, and then added a liberal amount of chcolate milk mix, turning it into the visual equivalent of sludge. I put all of that into the waffle maker, and according to my children, created wedge-shaped nirvana.

If you're not dieting, you should try the recipe and tell me what you think of it. I have no idea what it tastes like, but the boys love them.

Chocolate Chocolate Chip Waffles

1 cup per batch chocolate chips/crushed up bits
waffle mix made according to the package directions
1/4-1/2 C chocolate milk mix (like Nestle's Quik)

Mix together, put in waffle maker, heat about 5 min.

They freeze well, and reheat beautifully in the toaster.
